Ingredients:
- 227 grams starter (prepped)
- 600 grams bread flour
- 18 grams salt
- 397 grams warm water
Directions:
- Mix with stand mixer paddle attachment for 30-60 seconds.
- Leave covered in a bowl for 1 hour, then stretch; repeat once an hour for three hours. Chill covered dough in the fridge overnight.
- Let dough rise at room temperature for 2-3 hours.
- Score the dough before baking for 55 minutes at 400 degrees Fahrenheit in a parchment-lined dutch oven.
